GALLEY RECIPES

Farley Halladay's

Shoo Fly Cake

You’ve heard of Shoo Fly Pie, an Amish specialty.  This cake version is easier to make yet it retains the old-time taste. It's made entirely from stowed supplies. No fresh ingredients needed.

2 cups flour
1 cup brown sugar
Scant ½ cup shortening, butter or vegetable oil
1 cup boiling water
½ cup molasses
1 ½ teaspoons baking soda.
Set the oven to 350 degrees F. Cut fat into a mixture of the flour and brown sugar until mealy. Remove and save a heaping half cupful.  Bring water to a boil in a pan or micro-safe large enough to hold 3 cups.  (Mixture will froth up).  Stir molasses and baking soda into water until it stops foaming, then fold this liquid into the flour mixture until it’s evenly moistened. Put in a greased square pan and sprinkle with reserved crumb mixture. Bake 40 to 45 minutes or until it’s springy to the touch.  Serve plain or with cream, whipped topping, frosting or a sprinkling of powdered sugar.

Farley Halladay's

STEAMBOAT PORK 'N RICE

This hot, from-scratch, one burner meal is on the  galley table in  minutes or less thanks to a pressure cooker.  I still prefer a manual pressure cooker  over the new digitals because it can be used over almost any heat source. No electricity needed.

1 tablespoon vegetable oil
1 pound lean ground  pork

2 cups raw rice

Medium onion, diced
1 teaspoon minced garlic
15-ounce can diced tomatoes with green pepper
Water

Hot sauce (optional)

Heat oil in the cooker and brown pork, breaking it up. Stir in rice, garlic and onion.  Add water to tomatoes to make 4 cups total and add. Raise steam to 15 pounds for 5 minutes. Then turn off heat and let pressure return to normal.  When it does, open the cooker and add salt and pepper to taste.  Makes four big servings. Pass the hot sauce

Cook's note: We often invited marina neighbors on board for an impromptu meal. This recipe is easily stretched to serve a larger crew. Just add more rice and water accordingly. Add a bouillon cube or two to bring out a meatier flavor and bulk it out even further if necessary by adding rinsed, drained canned beans.

Heavy weather meal: Make a packet of ramen according to package directions, then stir in a can of pork and beans. Heat through. Ladle into soup bowls and top with crumbled pilot crackers.  Serves 3 to 4.
